If you have started paying a bit more attention to fibre, gut health or blood sugar control, there is a fair chance you may also have come across the term resistant starch. For most people, though, it is still not something that has been explained particularly well, which is probably why it tends to sound more complicated than it really is.

In simple terms, resistant starch is a type of starch that is not fully digested in the small intestine. Instead of being broken down quickly and absorbed in the same way as more digestible starches, part of it travels further down the digestive tract where it can be fermented by the bacteria living in the large intestine. In the UK, resistant starch is included within the definition of dietary fibre, which helps explain why it has become such an interesting topic in conversations around gut health and metabolic health.

That matters because once people hear the word starch, they often assume they are dealing with something fairly straightforward. Teff fits into this conversation because it is already a fibre-rich wholegrain, and it also contains resistant starch. That is part of what makes the grain so interesting from a nutritional perspective, alongside its broader fibre content and overall nutrient profile.

What I like about teff is that it brings together several things that matter at once. It contributes fibre, adds plant diversity and broadens the range of grains people eat on a regular basis. It also gives us a good example of how carbohydrate foods can offer more than simply quick energy.

That does not mean teff needs to be treated as a miracle food, nor does it need to replace the grains people already enjoy. The value is more practical than that. If someone's diet revolves around the same few staples each week, adding a grain like teff can quietly improve the overall quality and diversity of what they eat.
